From the French petit meaning “small,” the Japanese Petty takes the role of the Western paring knife or the larger utility knife. This blade is ideal for peeling and slicing fruits and vegetables, making garnishes, and other detailed food-preparation tasks. This smaller version is more akin to the classic paring knife with a slightly more robust blade.

Blade: The fully flat ground blade is San Mai Damascus stainless steel with VG10 core for style and performance. The outer layers protect and support the hardened steel center layer that forms the blade’s edge.
