Santoku (Bocho) literally means “three virtues” as this traditional Japanese kitchen knife is used in cutting, slicing, and chopping as an all-purpose knife for preparing meat, vegetables, and fish. The sheepsfoot blade uses less rocking compared to the Western chef’s knife which typically fills a similar role.
Blade: The fully flat ground blade is San Mai Damascus stainless steel with VG10 core for style and performance. The outer layers protect and support the hardened steel center layer that forms the blade’s edge. The Santoku’s sheepsfoot profile and a broad, thin 180 mm blade is ideal for cutting, slicing, and chopping and handles large volume with speed and efficiency.
Handle: The modified European style handle has a hidden tang construction for clean aesthetics with a durable black Pakkawood framed by red liners and attached with two stainless pins and a single mosaic pin.
